Panko crusted Cod or Haddock

  • 1 tbsp of mayonnaise
  • 1/2 tbsp of mustard
  • 1 tsp of dill seasoning
  • 4 tbsp of panko
  • 2 pieces of fish - haddock, cod or sole  best
  • salt and pepper


  1. Pre-heat oven to 400 degrees.
  2. Grease the pan that the fish will bake on.
  3. Place fish on dish.
  4. Spread the mayonnaise evenly over the fish.
  5. Spread the mustard evenly over the fish.
  6. Add pepper and salt to taste.
  7. Sprinkle the dill seasoning.
  8. Just before placing the fish in the oven spread the panko evenly over the pieces of fish.
  9. Bake the fish for approximately 15 minutes, until the fish is flaky and the edges are golden brown.
